For this episode of food23 we went to Brussels, Belgium, to taste the famous Belgian fries and to find out what makes them special.

In Brussels, Flagey to be precise, we go to Frit Flagey, known for the best fries in town. There, we talk to Kamel while he shows us how the famous fries are made.

The key ingredients, Kamel tells us, are good potatoes and the right oil, but it's the care and attention that goes into making them that truly makes the difference. Frit Flagey changes the oil almost every day to ensure the freshest and most delicious fries possible.

Belgian fries are known for their unique double-cooking process, which involves pre-frying at a lower heat and then a final deep-fry at a higher heat just before serving. Kamel tells us, he doesn’t need timers. He can always tell once they’re ready. “That comes with experience.”

But the fries are just the beginning of the Frit Flagey experience. The shop offers a wide variety of 20 different sauces, including classic ketchup, spicy andalouse sauce, and a unique pickle sauce. So there's something for everyone to enjoy.
